An innovative dessert made from plants and packed with protein

Paradise Icing™ -- a national brand and a home staple: That's what Emily Edwards, from Schererville, sees in the future for her dessert topping and snack food.

'Doing Sweet Better' is the motto of her company, Emily's Foods and Edwards says Paradise Icing™ is the best out of the jar product ready to decorate your cake, fill your dip bowl, or sweeten your coffee without any preservatives and allergens.

Pour it over popcorn, Edwards says, or spread it on a bagel. "It's a sweet that you don't have to worry that when it hits your lips, it will sit on your hips."

Everybody likes sweets, but they don't have any nutritional value.

Edwards believes Paradise Icing™ is the answer -- a plant-based sweet product that is rich in protein, made from pea powder. "Mine is unique. In the U.S., I make the only plant-based sweet product in the dessert category." And protein builds muscle, not fat.

The icing comes in 8-oz jars and in a snack pack of icing and sea salt coated pretzels, in assorted quantities. Two flavors, chocolate and vanilla, are on the market with strawberry coming soon.

Edwards' journey in food production began in 2015. She owned a social services agency and wanted to lose weight. Looking for a cleaner, digestible diet, she began in her own kitchen with the goal to make a muffin with less than 100 calories.

"I started out with whey powder from milk, but switched to pea powder,” Edwards said. “Further research led me to the Food Science Department on Purdue's West Lafayette campus where we came up with the product I wanted. It is shelf stable and maintains its integrity when heated."

Edwards sold her social services company in 2018 and now bears the title of chef.

Paradise Icing™ products are only available online. Bringing the new product to store shelves is now Edward's journey; it could bring more product validation and visibility in the marketplace.

She has a verbal commitment from Strack & Van Til with a few more steps to go for completion.

With the help of a public relations firm, she’s doing product demonstrations and being featured in magazines and trade publications.

In December, Edwards was a 2020 Society of Innovators Awards inductee. The Society, based at Purdue Northwest aims to identify, recognize and celebrate innovation and innovators in Northwest Indiana.

Edwards took her product to Purdue's Big Sell Competition, coming away with 2nd place.
